Fuji Apple Crisp
3 c. Thrive Fuji Apples (MAY SPECIAL)
2 c. Warm Water, to refresh
3/4 c. Oats (regular or gluten free)
1/2 c. Flour (regular or gluten free)
1 tsp. Apple Pie Spice or Cinnamon
2/3 c. White Sugar, divided
4 T. Cold Butter
1/2 tsp. Cinnamon

Preheat oven to 375. Place the apples in a medium bowl and add water. Press the apples to make sure they are all covered and let sit 10 minutes until mostly rehydrated. Set aside.
In a medium bowl add the oats, flour, apple pie spice and half the sugar (1/3 cup). Stir to combine. Cut the butter in to small cubes and add to the oat mixture. Use your fingers to combine the butter with the oats. Set aside.
Pour any remaining water from your apple bowl into a separate bowl to make 3/4 cup. Discard remaining liquid or add more if necessary to make 3/4 cup. Mix the cornstarch into the water and add to the apples. Add the cinnamon and the remaining half of the sugar (1/3 cup). Stir well then place in the bottom of an 8×8 baking dish.
Top with the oat mixture and bake until golden and bubbly; about 25 minutes on the center rack.
