Thrive’s April monthly delivery specials made me think of making a hearty soup, especially because our weather has been a bit chilly this spring. I get asked for meatless recipes often so this month I thought it would be a perfect chance to do that. It’s gluten-free too!

Cheesy Corn Chowder Recipe (Meal-in-a-Jar)
All ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100. A quart-sized jar will provide 3-4 servings.
Jar Ingredients:
- 1/4 tsp. Ground Pepper
- 1/2 tsp. Salt
- 2 tsp. Thrive Chicken Bouillon (or any brand)
- 2 T. Thrive Instant Milk
- 1/4 c. Thrive Green Onions (or Onion Slices)
- 3/4 c. Thrive Shredded Cheddar Cheese
- 2 c. Thrive Sweet Corn
- 1/2 c. Thrive Red Bell Peppers
Directions:
To make jar: Add ingredients to the jar in the order listed. Add an oxygen absorber or seal with a foodsaver jar lid attachment.
To prepare: Mix contents of jar with 3 cups of water in a large saucepan. Bring to a boil then reduce heat and simmer for 5-7 minutes. Blend the soup with an immersion blender until desired consistency is reached. You can also put about half of it in the blender until smooth and then return to the pot and stir.

The recipes will be best if you use freeze-dried foods but they can be any brand or even food you freeze-dry yourself with a home unit. Dehydrated foods would have different requirements for water and cooking so wouldn’t be a good substitution.

This is way too much to fit into a quart size jar, mine is full and I have to still add 1 c corn and 1/2 c peppers. Are the ingredient volumes correct?

Hey Patti, a quart size jar should fit 4 cups of product. Is it possible you are using a pint? If you add up the ingredients listed you can see that is is only 3 1/2 cups plus the spices in the bottom so it should fit just fine. Sorry you are having trouble!

Thank you. I re-read ingredients after filling jar and still read C instead of T for milk. Ugh!
