June Cooking Demo Replay – Camping Recipes
SCRAMBLED EGG MIX
Load up your egg mixes in single serve ziplock bags or Foodsaver bags. When ready to cook add water to the bag and mix up. You can cook them on a frying pan over a fire or simply boil water and set the bag in the pot! Perfect scrambled eggs for your campout.
Equivalent to a 2 egg scramble
Ingredients
1/4 c. Thrive Scrambled Egg Mix
2 T. Freeze-Dried Cheddar Cheese
2 T. c. Freeze-Dried Sausage Crumbles
1 T. Chopped Onions
1/4 c. Freeze-Dried Green Red Peppers
1/4 c. Freeze-Dried Diced Tomatoes
Directions:
Mix all ingredients in a quart-sized ziplock bag. When ready to cook, add 1/2 cup of water and seal the bag with most of the air removed. Squish around until well mixed. Pour into a frying pan and cook like a normal egg scramble or boil in the bag in a pot of water.
TINFOIL DINNERS
Mix and match these meals to make your own yummy tinfoil dinners for camping. Simply keep the ingredients in a ziplock back until ready to cook! Here is a basic formula to follow:
Ingredients:
1/2 c. Protein (I did ground beef)
1/4 c. Potato or Rice (I did rice)
1/2 c. Assorted Veggies (I used red peppers, chili peppers, onions)
2 tsp. Seasoning (I used taco seasoning)
5/6 ounces of Water
Directions:
Combine dry ingredients with water (either in a ziplock bag or a bowl). Allow to sit for 10-15 minutes or until most of the water is absorbed. You want it to be a little bit “soggy” so it doesn’t dry out when cooking. Pour the mixture onto a square of tinfoil and fold up into a sealed square. Double-layer it with another square of tinfoil. Cook in the coals of a fire or heated charcoal for 10-15 minutes. The meat is already pre-cooked so you only need to heat everything up and make sure the rice or potatoes are soft. Remove and open the pouch and enjoy!
Alternate recipe: The second recipe I did was sliced chicken, rice, red peppers, onions, pineapple, and a squirt of barbecue sauce once it was fully hydrated. Both were delicious!
GRANOLA TRAIL MIX
Homemade granola is so much better (and healthier) than store-bought. And the best part is you can mix and match with whatever freeze-dried fruits you want to make your own personalized trail mix!
Ingredients:
3 c. Rolled Oats
3 T. Brown Sugar
1/2 tsp. Cinnamon
1/4 tsp. Kosher Salt
1/3 c. Honey (I used reconstituted Thrive Honey Crystals)
1/4 c. Coconut Oil or Vegetable Oil
1 tsp. Vanilla Extract
Optional: freeze-dried fruits, chocolate chips, chopped nuts as desired (USE WHAT IS ON SALE)
Directions:
Preheat oven to 300 degrees and put the rack in the middle. Mix dry ingredients in a large bowl. Combine wet ingredients and mix well. It helps mix better if they are heated slightly. Pour the liquid over the dry ingredients and mix until the oats are thoroughly coated. Spread into a rimmed baking sheet in a thin layer. Bake for 15 minutes. Remove from oven and stir. Bake for another 10 minutes or so until the granola is a light golden brown (don’t overcook!) Allow to cool to room temperature and then add in any optional ingredients. YUM!
BLUEBERRY COBBLER
This simple recipe can be made in a regular oven or used for an easy and delicious dutch oven dessert.
Ingredients:
4 c. Thrive Blueberries (ON SALE)
1/2 c. White Sugar
Juice and Zest from 1 Lemon
1 c. Water
1 roll Refrigerated Sugar Cookie Dough
Directions:
Mix blueberries, sugar, lemon juice/zest, and water in a medium bowl. Allow to sit for 5-10 minutes until blueberry mixture is gooey like pie filling. Pour into a greased 9×9 pan. Cut the cookie dough into 1/4 inch slices and lay across the top of the blueberry mixture. Bake at 275 for 15-20 minutes or until cookie layer is golden brown. Serve warm with ice cream!
