Chicken Noodle Soup for One (Mini Meal-in-a-Jar)

Thrive’s January monthly delivery specials had a nice variety of meat and veggies that I thought would make great soups to use for easy, healthy lunches. We all want to eat healthier at this time of year am-i-right? So I’m introducing mini meal-in-a-jars with a yummy “Chicken Noodle Soup for One” recipe and we will be featuring more in our cooking demo tomorrow night! Register here if you haven’t yet.

Chicken Noodle Soup for One

Don’t forget all ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100. One jar (can fit in 1/2-pint or pint) will serve 1 person

Jar Ingredients:

  • 2 tsp. Thrive Chicken Bouillon
  • 1 tsp. Thrive Chef’s Choice Seasoning (seasoned salt)
  • 2 T. Thrive Freeze-Dried Chopped Onions
  • 1/4 c. Thrive Corn
  • 1/4 c. Thrive Freeze-Dried Diced Chicken
  • 2 T. Thrive Celery
  • 1/4 c. Thin Egg Noodles (or pasta of choice)

Directions:

To make jar: Add all ingredients to a pint or 1/2 pint-sized jar in order listed. If using a pint jar feel free to add heaping servings. Add an oxygen absorber or seal with a foodsaver jar lid attachment.

To prepare: Pour 2 cups of boiling water into pint size jar. Stir and let stand for 5-7 minutes or until noodles are soft. If using 1/2 pint size jar, pour contents of jar into a soup bowl. Add 2 cups of boiling to the bowl and stir. Let stand 5-7 minutes or until noodles are soft.

Add these items to your monthly delivery and you should be able to make around 13-14 pint-sized jars.

  • Thrive Chicken Bouillon (1 pantry can)
  • Thrive Chef’s Choice Seasoning (1 spice can)
  • Thrive FD Chopped Onions (1 pantry can)
  • Thrive FD Sweet Corn (ON SALE) (1 pantry can)
  • Thrive FD Diced Chicken (ON SALE) (1 pantry can)
  • Thrive FD Celery (1 pantry can)

Remember feel free to customize your delivery if you already have some of these items on hand or want to substitute a different product or brand. Also make sure to adjust your delivery each month for the new recipe so you don’t get sent the same items again!

    I am trying to get my freezer full of meals for my mom and dad l. They are elderly. They do like variety they only want left over s one the weekend s they want something different every night so I need idea . If you have any. I want to fill my sisters fridge for two months for four people she is having a baby. I know that will help so she doesn’t have to worry about that any ideas will help a lot.

      Hey Laura, I did that exact thing for my grandma a few years ago. You can view that post here: https://foodstoragemadeeasy.net/2013/09/04/freezer-meals-and-food-storage/ If you run out of freezer space you could definitely take any of these jar meal recipes and cut them in half and they should be about perfect for an older couple. They are easy to cook when they are ready to use them.

    Hi!
    I recently bought your “Meals in a Jar Made Easy”. I can work with your recipes to make adjustments for my specific dietary needs. THANKS!
    Just wondering: I dislike using ‘purchased’ sauces and gravies, etc. I do purchase Thrive Life FD foods, and will, eventually, be FD my own foods.
    Do you have recipes for shelf stable (using powders ONLY) for ingredients in your book like:
    Bechamel Sauce
    Veloute Gravy
    Tomato Sauce Mix
    Espagnoli Gravy/sauce
    etc.?
