Thrive’s March monthly delivery specials had a few fruits that I thought would make for a yummy dessert. I have heard of granny cakes where you substitute the oil in a cake recipe for canned fruit and decided to make a jar meal version using freeze-dried fruits. It’s nice to have meals in an emergency but it’s REALLY nice to have desserts!

Granny Cake (Dessert-in-a-Jar)
One set of jars will make 10-12 9×9 pans of cake.
Don’t forget all ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100.
Jar 1 (Quart) Ingredients:
- 1 c. Flour (can use gluten-free)
- 1 tsp. Baking Soda
- 3/4 c. White Sugar
- 2 T. Thrive Scrambled Egg Mix
- 1/2 c. Thrive Freeze-Dried Pineapple
- 3/4 c. Thrive Freeze-Dried Peaches
Jar 2 (Pint) Ingredients:
- 1/4 c. Thrive Butter Powder
- 1/3 c. Thrive Instant Milk Powder
- 1/3 c. Brown Sugar
- 1/2 c. Sweetened Coconut Flakes
Directions:
To make jars: Add ingredients to each jar in order listed. Add an oxygen absorber or seal with a Foodsaver jar lid attachment. Add an oxygen absorber or seal with a foodsaver jar lid attachment.
To prepare: In a medium bowl combine contents of jar 1 with 1 cup of water and let stand for 15 minutes. Pour into a greased 9×9 pan and bake at 350 degrees for 30-40 minutes or until cooked through thoroughly. You can cover with foil if edges are getting too brown. In a small saucepan mix contents of jar 2 with 1/2 cup of water. Bring to a boil and boil for 2 minutes. Slice cake and spoon sauce over the cake on the plate.

What is the normal shelf life for meals in a jar?

I have read on a variety of sites that you should never use an oxygen absorber with brown sugar, that it could actually cause mold. Can you clarify this for me?
