I’m continuing my monthly meal-in-a-jar project with a great Unstuffed Peppers recipe inspired by my Thrive friend Francesca. You can read more about the Meal-in-a-Jar project at this link and sign up to receive the monthly emails about it!
Here is February’s meal for the archives in case you joined the party late and missed it.
This month we are making delicious Unstuffed Bell Peppers featuring lots of red bell peppers which are one of the main sale items this month! This recipe will fit in one quart jar and feed 4-6 people.
Unstuffed Peppers Recipe
- 1/2 c. Thrive Ground Beef (FD)
- 1/4 c. Thrive Chopped Onions (FD)
- 1 c. Thrive Green Bell Peppers (FD)
- 1 c. Thrive Red Bell Peppers (FD)
- 1/4 c. Thrive Tomato Powder
- 1 c. Thrive Instant White Rice
- 1 T. Thrive Italian Seasoning Blend
- 1/2 tsp. Thrive Chef’s Choice
- 2 tsp. minced Garlic
- 2 tbsp. Beef Bouillon
- 1 c. Cheddar Cheese (optional)
Cooking Directions: In a large saucepan bring 6 cups of water to a boil. Add contents of jar and let simmer for 15-20 minutes. For a thicker casserole meal use 4 cups. Sprinkle with cheddar cheese and serve.
Makes 10-12 quart jars
Add these items to your monthly delivery from Thrive Life. Try to not over-scoop so that you don’t run out of some of the items. Settling does occur in some of the products so if you plan for 10 jars you should have enough, but you might be able to get 12 out of them! You should have some leftovers of some items too.

1 #10 can – Thrive FD Green Bell Peppers
1 #10 can – Thrive FD Red Bell Peppers
1 pantry can – Thrive Tomato Powder
1 #10 can – Thrive Instant White Rice
1 spice jar – Thrive Italian Seasoning
1 spice jar – Thrive Chef’s Choice
Remember feel free to customize your delivery if you already have some of these items on hand or want to substitute a different product or brand. Also make sure to adjust your delivery each month for the new recipe so you don’t get sent the same items again!
