I’ve been having some fun getting my kids help cooking this summer. When they cook, they always like it more. We tried a new recipe a couple weeks ago that I was excited they ALL liked. I saw the recipe online and it called for frozen veggies. Well I didn’t have any of those but I sure do have freeze-dried veggies! These came together really quickly and were a big hit! It was a great way to use some left-over quinoa I had and get some good nutrition in. Getting my 4 year old to eat veggies is kind of a BIG DEAL so …. ya
Cheese and Veggie Quinoa Bites
Ingredients:
1 cup cooked quinoa
3/4 cup shredded cheese of your choice
1 cup chopped freeze-dried veggies (I used broccoli and cauliflower and added a tablespoon of water)
1/2 tsp salt
2 eggs
Preheat oven to 350 and spray some muffin tins with oil. Crush freeze-dried veggies (to hide from picky eaters) in a ziploc bag by rolling them out with a rolling pin. Combine ingredients and press into muffin tins dividing evenly about 3/4 full. Bake 15-20 minutes
