Happy June! This month we have Father’s Day, two birthdays, summer soccer camps, and more to keep us busy so EASY jar meals are popular in my kitchen since I work full time and even the kiddos can make these. This month I used the June monthly delivery specials to make a quick and easy chicken enchilada casserole but the best part is you cook it in a skillet so you don’t have to heat up the oven and cooks in just a few minutes! I hope you like it, it was a hit with my family!

Skillet Chicken Enchilada Casserole (Meal-in-a-Jar)
Don’t forget all ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100. One quart-size jar will make 3-4 servings
Jar Ingredients:
- 1 tsp. Freeze-Dried Garlic
- 1 tsp. Dehydrated or Freeze-Dried Cilantro
- 1/4 c. Thrive Chopped Onions
- 1/4 c. Thrive Green Chile Peppers
- 1/2 c. Thrive Chopped Corn
- 1 c. Thrive Refried Beans
- 1 c. Thrive Grilled Chicken Dices
- 3/4 c. Thrive Mozzarella Cheese (in separate baggie)
You also need 1 19 oz can of red enchilada sauce and 6 corn tortillas!
Directions:
To make jar: Add all ingredients to a pint-sized jar in order listed. Make sure to put the cheese in a separate baggie and tuck it into the top. Add an oxygen absorber or seal with a foodsaver jar lid attachment.
To prepare: Remove the baggie from the jar and refresh cheese by tumbling it with a little bit of water in a small tupperware container. Pour the remaining jar ingredients into a large skillet and Add 1 3/4 cups of water. Turn on heat to medium low and stir well until all water is absorbed and beans are hydrated and smooth.
Stir in the enchilada sauce. Cut up the tortillas into small 1 inch strips and stir in. Let heat up for a few minutes. Take the rehydrated cheese and sprinkle it on top. Cover with a lid and heat until cheese is melted. Serve with tortilla chips, sour cream, etc.
