CHICKEN POT PIE SOUP
Ingredients:
1 C Thrive Life Diced Chicken
1/2 C Thrive Life Sweet Corn
1/2 C Thrive Life Green Peas
3/4 C Thrive Life Potato Dices
1/4 C Thrive Life Carrot Dices
1/8 C Thrive Life Chopped Onions
1/8 tsp pepper
1/4 C Thrive Life Velouté
Directions:
Put all ingredients except the Velouté in a pot and add 5 cups of hot water. Let sit for 10 minutes.
Put pot on medium heat stove and let simmer for about 4-5 minutes. Turn off heat.
Stir in the Velouté. If you want to thicken the soup, mix a tablespoon of flour with 2 tablespoons of water and stir into the hot soup. Put lid on pot and let sit 5 minutes before serving.
CHICKEN COCONUT CURRY
Ingredients:
1 Tbsp coconut oil
2 cloves minced garlic
1 Tbsp grated ginger
1 Tbsp curry powder
1/2 C Thrive Life Chopped Onions
1/2 C Thrive Life Tomato Dices
1 C Thrive Life Chicken Slices
1/2 C water
1 can coconut milk
1/2 c sour cream or plain Greek yogurt
1/4 C green onions
salt and pepper to taste
Directions:
In a pot add coconut oil, garlic, ginger, and curry powder and cook for a few minutes on medium heat until the oil is infused with the spices. Add onion, diced tomatoes, chicken, and water. Cook for another few minutes until chicken is refreshed. (Add more water if needed.) Add coconut milk and sour cream or yogurt and simmer until incorporated, about 10-15 minutes.
Top with the green onions and fresh cilantro before serving. Serve over rice, potatoes, or gnocchi noodles.
GINGER BEEF
Ingredients:
2 tsp Thrive Life Vegetarian Beef Bouillon
1/2 C water
1/3 C low-sodium soy sauce
2 Tbsp Thrive Life Honey Crystals or other sweetener
2 Tbsp minced fresh ginger
1 Tbsp sesame oil
1 Tbsp cornstarch
3 cloves garlic, minced, or Thrive Life Garlic
1 pinch red pepper flakes (optional)
2 C Thrive Life Diced Beef
1 tsp Thrive Life Vegetarian Beef Bouillon
3/4 C Thrive Life Green Peas
1/2 C Thrive Life Chopped Onions
1 C Thrive Life Broccoli
1/2 C Thrive Life Carrot Dices
1 C Thrive Life Red Bell Peppers
2 C water to refresh all the veggies
You can substitute any of the veggies with Thrive Life, fresh, or frozen veggies.
Directions:
To make the sauce, mix the first 9 ingredients together in a small bowl. Let the mixture sit while you work on the rest of the recipe.
To make the stir-fry, mix the last 8 ingredients into a pot and let them refresh. Once refreshed, add the sauce mixture to the stir-fry mixture. Let the mixture simmer until sauce is thickened and food is cooked through.
Enjoy with Thrive Life Instant White Rice or Instant Brown Rice or noodles.
TACO/FAJITA SOUP (IN-A-JAR)
Ingredients:
1 1/2 C Thrive Life Diced Beef or Ground Beef
1/4 C Thrive Life Chopped Onions
1/4 C Thrive Life Carrot Dices
1/3 C Thrive Life Sweet Corn
1/2 C Thrive Life Instant Black Beans
1/3 C Thrive Life Red Bell Peppers
1/3 C Thrive Life Tomato Dices
1 Tbsp Thrive Life Green Chili Peppers
1/2 C Thrive Life Classic Tomato Sauce
2 Tbsp Thrive Life Vegetarian Beef Bouillon
1 Tbsp taco seasoning
1-2 tsp chili powder
1-2 tsp cumin
salt and black pepper to taste
5 C water
1/4 C Thrive Life Cheddar Cheese (optional not in jar)
Directions:
Fill the jar starting with smaller ingredients first if you want a pretty, layered jar. When ready to cook, add all ingredients to a pot. Bring to a boil and cook over medium heat until beans and meat are tender.
Top with sour cream, refreshed cheddar cheese, and crushed tortilla chips if you wish.
