I’m always looking for quick and easy dinners at this time of year so using the May monthly delivery specials I developed an easy Black Bean Chicken Bake recipe that only takes 2 minutes to prepare. Throw it in the oven while you’re driving kids around and come back to a delicious dinner in about 40 minutes.

Black Bean Chicken Bake Recipe (Meal-in-a-Jar)
Don’t forget all ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100. One quart-size jar will make 3-4 servings
Jar Ingredients:
- 1/2 tsp. Garlic Salt
- 1/2 tsp. Chili Powder
- 1 T. Cilantro, freeze-dried or dehydrated
- 2 T. Thrive Chopped Onions
- 2 T. Thrive Green Chile Peppers
- 1/2 c. Thrive Chopped Corn
- 1/2 c. Thrive Instant Black Beans
- 3/4 c. Thrive Grilled Chicken Dices
- 1 c. Thrive Cheddar Cheese (in separate baggie)
Directions:
To make jar: Add all ingredients to a pint-sized jar in order listed. Make sure to put the cheese in a separate baggie and tuck it into the top. Add an oxygen absorber or seal with a foodsaver jar lid attachment.
To prepare: Add 2 cups of water to a square baking dish. Remove cheese pouch and pour contents of jar into dish and stir well. Bake for 20 minutes at 375 degrees Farenheit. Meanwhile, add water to the pouch of cheese a little bit at a time until it mostly all absorbed. Set in fridge. After 20 minutes, add cheese to the top of the casserole and cook for 20 more minutes. Serve with sour cream, tortilla chips, or anything else you’d like!
