March Cooking Demo Replay – “Southwest Starter Pack”
BEEF FAJITA BAKE
This easy casserole has all the flavor of fajitas but is quick and easy to put together and uses tons of the items from the southwest starter pack!
Ingredients:
1 T. Taco Seasoning
1 tsp. Thrive FD Garlic
1/2 tsp. Salt
1/4 tsp. Black Pepper
1/2 tsp. Beef Bouillon
1/4 c. Thrive Tomato Sauce Powder
2 T. Thrive Green Chile Peppers
1 c. Thrive Instant Rice
3/4 c. Thrive Ground Beef
1/2 c. Thrive Red Bell Pepper
1/2 c. Thrive Chopped Onions
1/2-3/4 c. Thrive Pepperjack Cheese
Directions: Preheat oven to 350 degrees. Rehydrate cheese in a small container with a lid. Add 2 T. of water and shake until all water is absorbed. If cheese is not soft enough add a little more water and shake again. Place in fridge. Pour remaining items into a 9×9 baking dish. Pour 2 1/4 c. water into the dish and stir well. Let stand for 10 minutes. Bake for 15-20 minutes stirring halfway through. Once the casserole is fully hydrated and rice is cooked, top with the hydrated cheddar cheese spreading it evenly over the top. Bake for another 5-7 minutes or until cheese is melted.
CHICKEN ENCHILADA DIP
This yummy dip is perfect for any event and so easy to put together using the cheese and chicken from the southwest starter pack
Ingredients:
1.5 cups Thrive Pepperjack Cheese, reconstituted
1 cup Enchilada Sauce
1 cup Thrive Chicken Slices
12 oz. Cream Cheese, softened
1/4 cup Thrive Green Chili Peppers
1 tbsp. Taco Seasoning
Directions: Preheat oven to 350 degrees. Mix chicken and green chilis in a bowl. Add water to reconstitute chicken/green chilis, probably about 1/4 cup. Add water and/or drain as needed. Then add your enchilada sauce, cream cheese, reconstituted cheese, and taco seasoning and mix well. Transfer dip to a cast-iron skillet and bake until warmed through and bubbly, 20-25 minutes.
Top dip with shredded lettuce and insert graves. Serve with tortilla chips.
