February Cooking Demo Replay – “Simple Soups”

CHICKEN TORTILLA SOUP

Always a family favorite around here, this chicken tortilla soup recipe is one of the best and is so easy using mainly freeze-dried foods!

Ingredients:
1 T. Avocado Oil
4 T. Butter
3/4 c. Thrive FD Onions
1 tsp. Thrive FD Garlic
1/2 c. Thrive FD Red Bell Pepper
1/2 c. Thrive FD Corn
1 c. Thrive FD Chicken Dices
6 Corn Tortillas, cut into small pieces
2 tsp. Chili Powder
1 T. Cumin
2 T. + 2 tsp. Thrive Chicken Bouillon
1/4 c. Thrive Sour Cream Powder
8 c. Water
Salt to taste
1/8 tsp hot sauce (optional)

Corn tortilla strips (garnish)
Sour cream (garnish)
Avocados, diced (garnish)
Lime slices (garnish)
 
Directions: Add about 1/2 cup of water to the bowl of chicken and set aside. Heat avocado oil and melt butter in a large sauté pan over medium heat. Add onions, garlic, bell pepper, corn. Toss and stir until just starting to caramelize, about 5 minutes. Add chili powder, cumin, bouillon and sour cream powder. Toss to coat. Add 2 cups water to deglaze. Add the rest of the water and bring to a boil. Remove a few cups of the soup and blend in the blender or with an immersion blender and when blended, pour back into the pot. Add chicken and let simmer for about 5 more minutes and then serve.

Serve with your favorite garnishes.


BEEFY MINESTRONE SOUP

This is an easily customizable soup that can be made with your favorite veggies and pasta.

Ingredients:
1/4 c. Thrive FD Corn
1/4 c. Thrive FD Celery
1/4 c. Thrive FD Onions
1/4 c. Thrive FD Green Beans
1/4 c. Thrive FD Green Peas
1/4 c. Thrive Dehydrated Carrots
1/4 c. Thrive FD Bell Pepper
1/4 c. Thrive FD Instant Black Beans
1/4 c. Thrive FD Ground Beef or Diced Beef
4 T. Thrive Tomato Powder or Tomato Sauce Powder
1/2 tsp. Italian Seasoning
1 tsp. Parsley
2 T. Thrive Beef Bouillon
3/4 c. Small Pasta (i.e. Ditalini)

Directions: In large soup pot, bring 8 cups of water to a rolling boil. Stir in ingredients and bring to a boil. Lower heat to a simmer and cook 10 minutes or until pasta is cooked. Add salt and pepper to taste. Serve with yummy rolls.



TOMATO SOUP

If you like canned Campbell’s tomato soup you will like this one even more! Similar in texture but more flavor and still super easy to make.

Ingredients:
1/4 c. Thrive Tomato Sauce
1/4 c. Thrive Instant Milk
2 T. Thrive Chopped Onions
1 c. Thrive Diced Tomatoes
Salt and Pepper to taste
2 c. Water

Directions: Add 2 cups of water to a high powered blender. Add all recipe ingredients into blender. Blend on soup mode until warm. (If you don’t have soup mode, blend in a regular blender and then heat on the stove or microwave until warm)


ZUPPA TOSCANA SOUP

This is one of my favorite copycat recipes because it tastes EXACTLY like the Olive Garden Zuppa Toscana and that is one of my favorite soups!

Ingredients:
1/4 c. Thrive Sour Cream Powder
3 T. Thrive Veloute Gravy
1 T. Chicken Bouillon
3 T. Thrive Chopped Onions
1/2 tsp. Garlic Powder
1/2 tsp. Thrive Chef’s Choice Seasoning
3/4 c. Thrive Spinach
3/4 c. Thrive Diced Potatoes
3/4 c. Thrive Sausage Crumbles
3/4 c. Thrive Mashed Potatoes

Directions:
Pour 5 cups of water into a large saucepan. Add all remaining ingredients and stir thoroughly. Cook 10-12 minutes or until potatoes are soft.
