Thrive’s May monthly delivery specials included butternut squash for 40% off so I knew I needed to make a yummy recipe that included a lot of it. What could be better than a butternut squash bisque? I often try to include one of the meats that are on sale but this month I decided to go with a vegetarian dish to mix it up for our vegetarian readers. I love having quick and easy dinner options in the summer and soups mixed with summer salads are perfect!

Vegetarian Butternut Squash Bisque (Meal-in-a-Jar)
Don’t forget all ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100. One quart-size jar will serve 3-4 people
Jar Ingredients:
- 2 T. Thrive Butter Powder
- 2 T. Vegetarian Chicken Bouillon (can use Thrive)
- 1 tsp. Paprika
- 2 tsp. Chives
- 1/4 c. Thrive Instant Milk
- 1/4 c. Thrive Chopped Onions
- 1 c. Thrive Potato Dices
- 2 c. Thrive Butternut Squash
Directions:
To make jar: Add all ingredients to a quart-sized jar in order listed. If putting in reverse order you can add heaping servings. Add an oxygen absorber or seal with a foodsaver jar lid attachment.
To prepare: Pour 6 cups of water into a large saucepan. Add contents of jar and stir thoroughly. Cook 10-12 minutes or until veggies are soft. Blend with an immersion blender or in a regular stand blender until smooth. Top with a sprinkle of additional chives and salt and pepper to taste.
