This month’s live cooking demo features tons of healthy eating hacks to help you hit your health and dieting goals this year. We utilize the January specials from Thrive Life and show you how to use freeze-dried food to make it easier to eat healthy.

January Cooking Demo Replay – Healthy Eating Hacks
MINI MEALS (single-serving meal prep)
Mix and match meats, veggies, starches, and spices to make any number of single-serving meals that you can enjoy for a quick healthy lunch or dinner. You can make these in 1/2 pint jars and combine with water in a separate container or make in pint jars and pour the water directly into the jar.
Chicken Noodle Soup
2 tsp. Thrive Chicken Bouillon
1 tsp. Thrive Chef’s Choice Seasoning (seasoned salt)
2 T. Thrive Freeze-Dried Chopped Onions
1/4 c. Thrive Freeze-Dried Corn (ON SALE)
1/4 c. Thrive Freeze-Dried Diced Chicken (ON SALE)
2 T. Thrive Freeze-Dried Celery
1/4 c. Thin Egg Noodles (or pasta of choice)
Directions: Add 2 cups boiling water and stir.
Beef Stew
2 tsp. Thrive Beef Bouillon
1 tsp. Thrive Chef’s Choice Seasoning (seasoned salt)
2 T. Thrive Freeze-Dried Chopped Onions
2 T. Thrive Freeze-Dried Corn (ON SALE)
1/4 c. Thrive Freeze-Dried Green Beans (ON SALE)
1/4 c. Thrive Freeze-Dried Potatoes
1/4 c. Thrive Beef Dices
Directions: Add 2 cups boiling water and stir.
Chili
2 tsp. Thrive Tomato Sauce Powder
1 tsp. Chili Powder
1 T. Thrive Freeze-Dried Chopped Onions
1 T. Thrive Freeze-Dried Green Chili Peppers
2 T. Thrive Freeze-Dried Corn (ON SALE)
1/4 c. Thrive Freeze-Dried Diced Tomatoes
1/4 c. Thrive Instant Black Beans (ON SALE)
1/4 c. Thrive Freeze-Dried Ground Beef (ON SALE)
Directions: Add 1.5 cups boiling water and stir. Let stand long enough for beans to soften.
SCRAMBLED EGG CUPS (make ahead breakfasts)
Ingredients:
6 eggs (3/4 c. Scrambled Egg Mix + 1 c. + 2 T. Water)
salt and pepper, to taste
1/2 c. Shredded Cheese, rehydrated (PepperJack is on sale)
1 1/2 c. Mix and Match Ingredients, refreshed
Directions:
Preheat oven to 350ºF. Add freeze-dried ingredients to a small bowl (use sausage, peppers, onions, spinach (on sale), whatever you like! Spray with water to slightly hydrate. In a separate bowl, combine egg mix with water and add salt and pepper. Beat well. Lightly grease a 6-muffin tin. Add 1/4 cup of mix-ins to bottom of each muffin tin. Pour the beaten eggs into each muffin cup until the liquid almost reaches the top. Sprinkle rehydrated cheddar cheese on top. Bake for 20 minutes or until eggs are cooked through. Enjoy! Makes 6 egg cups. Refrigerate until ready to eat.

GREEN SMOOTHIES
Ingredients:
1-2 c. water
1/2 c. ice
1/2-3/4 c. GREEN VEGGIES (spinach, kale, broccoli, beans, peas, etc.)
2-3 c. SWEET FRUITS (banana, mango, pineapple, strawberry, peaches, etc.)
Directions:
Add water and ice to your desired consistency. Add fruits and veggies of choice. Blend well and enjoy! Mix and match with items that are on sale or that suit your taste preferences. Smoothies can be made in batches and stored in jars or ziplock baggies.
FRUIT AND VEGGIE POWDERS
Collect the fruit and veggie powders from the bottom of your cans and place in a “powders” jar. Fruit powders can be used in popsicles, yogurt, oatmeal, smoothies, frosting, etc. Veggie powders can be snuck into smoothies, spaghetti sauce, casseroles, soups, etc. You can also powder individual ingredients like peppers if you have someone who objects to textures of certain foods. Powder fruits, veggies, or meats and make cheap and easy baby food!
