Thrive’s October monthly delivery specials contained beef dices and red pepper slices which to me says FAJITAS! However, I’ve done a Chicken Fajita meal-in-a-jar recipe before so I didn’t want this to be too similar. I found a delicious recipe for a beef fajita rice bake and made my Thrive twists on it and I think it turned out pretty good. I hope you like it!

Beef Fajita Bake Recipe (Meal-in-a-Jar)
Don’t forget all ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100. A quart-sized jar will make 4-5 servings.
Jar Ingredients:
- 1 T. Taco Seasoning
- 1 tsp. Thrive FD Garlic
- 1/2 tsp. Salt
- 1/4 tsp. Black Pepper
- 1/2 tsp. Beef Bouillon
- 1/4 c. Thrive Tomato Sauce Powder
- 2 T. Thrive Green Chile Peppers
- 1 c. Thrive Instant White Rice
- 3/4 c. Thrive Diced Beef (or Ground Beef)
- 1/2 c. Thrive Red Bell Pepper
- 1/2 c. Thrive Onion Slices
- 1/2-3/4 c. Thrive Shredded Cheddar Cheese
Directions:
To make jar: Add all ingredients except the cheese to a quart jar in order listed. Put cheese in a small baggie and set gently inside jar. (A wide-mouth jar works best for this recipe). Add an oxygen absorber or seal with a foodsaver jar lid attachment.
To prepare: Preheat oven to 350 degrees. Remove baggie and pour cheese into a small container with a lid. Add 2 T. of water and shake until all water is absorbed. If cheese is not soft enough add a little more water and shake again. Place in fridge. Pour remaining contents of jar into a 9×9 baking dish. Pour 2 1/4 c. water into the dish and stir well. Let stand for 10 minutes. Bake for 15-20 minutes stirring halfway through. Once the casserole is fully hydrated and rice is cooked, top with the hydrated cheddar cheese spreading it evenly over the top. Bake for another 5-7 minutes or until cheese is melted.

Remember feel free to customize your delivery if you already have some of these items on hand or want to substitute a different product or brand. Also make sure to adjust your delivery each month for the new recipe so you don’t get sent the same items again!

In the recipe after adding water, instructions say “store well”. Do you mean “stir well”?
I did 2 Thrive orders trying to add one to the other, but hope they both are delivered as I really stocked up. 😋😉

where can I find avery labels for printing your recipes on? I have not been able to find ay the size of your labels or even a blank full page that I can print them on.

I always just tape mine on! Maybe I should look into finding regular labels that would work and doing them the right size for them. That would be a great feature for the future 🙂
