Cilantro Lime Rice
Ingredients:
2 c. Thrive Instant White Rice
2 c. Water
2 tsp. Thrive Chicken Bouillon
1 tsp. Thrive Garlic
2 T. Freeze-Dried Cilantro (or 1 handful fresh)
1/2 Lime, juiced (or lime powder)
1/4 c. Thrive Green Chili Peppers
Directions:
Add all ingredients to a large saucepan. Bring to a boil and cook 3-5 minutes or until all water is absorbed. Fluff the rice and enjoy!
Black Beans
Ingredients:
2 c. Thrive Instant Black Beans, cooked (JULY SPECIAL)
3 T. Olive Oil
1 tsp. Thrive Garlic
1 tsp. Cumin
1 T. Freeze-Dried Cilantro (or dehydrated)
1 c. Tomato Juice (can make using Thrive Tomato Powder)
Salt and Pepper to taste
Directions:
Cook the black beans according to package directions. Drain and set aside. Heat the olive oil in a frying pan. Saute garlic for 1 minute. Add spices and stir. Add cooked black beans and stir. Pour in tomato juice and stir. Add salt and pepper to taste. Simmer about 5 minutes.
Sweet Pulled Pork
Ingredients:
Marinade
2 c. Thrive Pulled Pork (JULY SPECIAL)
1 can Coca-Cola (not diet)
2 T. Brown Sugar
Sauce
1/2 can Coca-Cola
1/2 c. Brown Sugar
2 T. Thrive Green Chili Peppers
1/2 c. Enchilada Sauce
Directions:
Put pork in a quart-sized ziplock bag and break apart large chunks. Add coke and sugar and allow to marinate for several hours. Drain any remaining liquid. Pour the pork into a bowl and shred into small pieces. In a medium saucepan combine all sauce ingredients and mix well. Cook on medium heat until sauce starts to thicken. Add pork and cook on low for 10-15 minutes.
Pico de Gallo
Ingredients:
1 c. Thrive Tomato Dices (JULY SPECIAL)
2 T. Thrive Onion Slices (JULY SPECIAL)
2 T. Thrive Green Onions
2 T. Freeze Dried Cilantro (or dehydrated)
2 T. Thrive Green Chili Peppers
1 T. fresh lime juice (or use lime powder)
1 tsp. Thrive Garlic
Kosher Salt and Pepper to taste
Directions:
Combine all ingredients into a small bowl. Slowly add water until there is only a small amount in the bottom of the bowl. All items should be fully hydrated and not absorbing any more water. Feel free to add in a chopped fresh tomato to give it a little crunch! Chill for one hour before serving.
Creamy Tomatillo Dressing
Ingredients:
1/4 c. Thrive Green Chili Peppers
1 tsp. Thrive Garlic
1 Tomatillo
2 T. Freeze Dried Cilantro (or one handful fresh)
1 Lime juiced (or use lime powder)
1 c. Water
1/4 c. Thrive Instant Milk (60% OFF SALE)
1 Package Dry Ranch Dressing
1 Cup Mayonnaise (can make with Thrive Scrambled Egg Mix – see video)
Directions:
Mix all ingredients except mayonnaise in a blender until well blended. Whisk in mayonnaise or lightly blend it to combine. See video for how to make your own mayonnaise using Thrive Scrambled Egg Mix)
Tres Leches Cake
Ingredients:
1 stick (1/2 c.) Butter, melted and cooled
1 1/2 c. Flour (can use Thrive Gluten-Free Flour)
1 tsp. Baking Powder
1/2 tsp. Coarse Salt
5 Eggs (can use Thrive Scrambled Egg Mix equivalent)
1 c. Sugar, divided
1 tsp. Vanilla
Three Milks w/ Thrive Instant Milk (60% OFF SALE)
1 c. Whole Milk (1 c. Water + 1/4. Instant Milk)
1 (12 oz) can Evaporated Milk (1 1/2 c. Water + 1 c. Instant Milk)
1 (14 oz) can Sweetened Condensed Milk (1/2 c. Hot Water + 1 T. Butter + 1 c. White Sugar + 1 c. Instant Milk)
Directions:
Heat oven to 350. Grease a 9 x 13″ pan. In a medium bowl, whisk together flour, baking powder and salt. In a mixing bowl, beat eggs and 3/4 cup sugar on high until pale and thick, about 4 minutes. Add vanilla and beat to combine. With mixer on low, gradually add flour mixture and beat to combine. Fold in melted butter. Pour mixture into cake pan and bake until top is golden brown and a toothpick inserted in center comes out clean, rotating halfway through cooking (about 20-25 minutes). Let cool.
Blend each of the milks one at a time and pour into a medium mixing bowl. Whisk together until well combined. Poke holes all over your cake with a toothpick or wooden skewer and pour the milk all over it. Let cool for about an hour and all the liquid will absorb into the cake.
Top with additional whipped cream, caramel sauce, and fruit as desired. EAT!
