Southwest Pasta Salad
Ingredients:
1 c. Thrive FD Sweet Corn
1 c. Thrive FD Cheddar Cheese (JUNE SPECIAL)
1 16 oz. box Pasta, prepared
3/4 c. Sour Cream
3/4 c. Mayonnaise
1 1 oz. packet Ranch Seasoning Mix
1/2 tsp. Ground Cumin
1/2 tsp. Salt
1/4 tsp. Ground Pepper
1 tsp. Lime Zest
1 tbsp. Lime Juice
1/4 c. FD Green Onions
1/4 c. FD Chopped Onions
1/4 c. FD Green Chili Peppers (JUNE SPECIAL)
1 c. Thrive FD Red Bell Peppers, crushed (JUNE SPECIAL)
1 pt. Cherry Tomatoes, halved (can use Thrive FD Tomatoes)
1 15 oz. can Pinto Beans, drained and rinsed (can use Thrive Instant Beans)
Cilantro to taste
Directions:
Cook pasta, rinse, and let cool. Hydrate corn and cheese in separate containers. Mix sour cream, mayo, and seasonings together in small bowl. Add freeze dried onions and peppers and stir. In a large bowl combine pasta, dressing mix, refreshed corn and cheese, tomatoes, and beans. Stir until well-mixed. Top with Cilantro if desired.
Egg Salad Sandwiches
Ingredients:
1/4 c. Thrive Scrambled Egg Mix (JUNE SPECIAL)
6 T. Water
1/4 tsp. Salt
1/8 tsp. Pepper
1/2 tsp. Olive Oil
1/2 tsp. Mustard
1 tsp. Lemon Juice
1 T. Mayonnaise
2 T. Thrive Celery
2 tsp. Thrive Onions
Sprinkle of Dill Weed
1 recipe Thrive Country White Bread Dough (JUNE SPECIAL) Optional
Directions:
Whisk egg mix and water together in a small bowl and add salt and pepper. Scrambled eggs, breaking into small chunks. In a separate bowl combine oil, mustard, and mayonnaise until smooth. Add celery and onions and allow to soften slightly. Add cooked eggs and stir. Sprinkle with dill weed and additional salt and pepper to taste. Refrigerate until completely cook. Put onto toast, king’s hawaiian rolls, or make a batch of Thrive bread dough and roll into buns or use as sliced bread!
Fancy Fruity Lemonade
Ingredients:
1 c. Thrive Raspberries (JUNE SPECIAL)
1 c. Thrive Peaches (JUNE SPECIAL)
1 c. White Sugar
1 c. Water
1 scoop Thrive Lemonade (SEASONAL ITEM)
1 qt. Water
1/2 c. White Sugar
1 qt. Sprite (or other soda)
Additional peaches and raspberries for garnish
Directions:
Combine first 4 ingredients in a small saucepan and simmer for 7-10 minutes. Strain with a mesh strainer catching the juice/syrup in a bowl and then let cool. Meanwhile make a batch of bubbly lemonade by combining the next 4 ingredients into a large pitcher. Take a second pitcher (use a pretty one) and pour the syrup into the bottom. Fill the remainder of the pitcher with the lemonade mixture. Pour the mixed drink into individual glasses and garnish with a few peaches and raspberries. Enjoy!
Fruity Popsicles
Ingredients:
Freeze-Dried Fruits
Lemonade
Fruit Juice
Instant Milk
Yogurt
Directions:
Mix and match to create all kinds of delicious popsicles. Fruit can be powdered or whole. Add instant milk to make a creamier popsicle. Swirl fruit puree with yogurt to make a creamsicle. Use the fruits that are on sale (Raspberries and Peaches) or whatever fruits you love! Freeze in popsicle molds and enjoy,
COCONUT BITES
As mentioned in the video, Coconut Bites are now available in Pantry Cans! With that in mind we HAD to highlight a few yummy ways to use your coconut bites including this amazing almond bark recipe.
Almond Bark
Ingredients:
2 c. Melting Chocolate
1/2 tsp. Coconut Oil
Almonds
Freeze Dried Raspberries, crushed (JUNE SPECIAL)
Coconut Bites (JUNE SPECIAL)
Directions:
Melt chocolate and coconut oil in a double boiler or in the microwave until smooth. Pour into a 9×9 pan lined with wax paper. Sprinkle almonds on top, then add raspberries and coconut bites. Allow to cool in fridge until chocolate is hardened. Can customize with other nuts, fruits, and yogurt bites to make all kinds of varieties.
