Scrambled Egg Muffin Cups Meal-in-a-Jar

Thrive’s June monthly delivery specials featured Scrambled Egg Mix which hasn’t been on sale for a LONG time so I knew I wanted to create a recipe that included it. I like making batches of breakfast foods that the kids can grab on the way to work or to have a hearty meal without me having to cook every day. So making these egg muffin cups is perfect for that!

Scrambled Egg Muffin Cups Recipe (Meal-in-a-Jar)

Don’t forget all ingredients will be cheaper and are available for free shipping for delivery customers if your order is over $100. A quart-sized jar will make 12 egg muffins.

Jar Ingredients:

  • 1 1/2 c. Scrambled Egg Mix
  • 1/4 c. FD Chopped Onion
  • 1/4 c. FD Green Chili Peppers
  • 1/2 c. FD Sausage
  • 2/3 c. FD Cheddar Cheese
  • 2/3 c. FD Red Bell Peppers

Directions:

To make jar: Add ingredients to jar in order listed. Add an oxygen absorber or seal with a foodsaver jar lid attachment.

To prepare: Mix contents of jar with 2 1/2 cups of water. Allow all freeze dried items to soften. Grease a muffin tin and preheat oven to 350. Pour egg mixture evenly into the 12 muffins (about 1/2 cup per tin). Bake for 30-35 minutes or until a knife inserted in the center comes out clean.

  • Thrive Freeze-Dried Sausage Crumbles (1 pantry can)
  • Thrive Freeze-Dried Cheddar Cheese ON SALE (1 family can)
  • Thrive Freeze-Dried Red Peppers ON SALE (1 family can)

Remember feel free to customize your delivery if you already have some of these items on hand or want to substitute a different product or brand. Also make sure to adjust your delivery each month for the new recipe so you don’t get sent the same items again!
