April Cooking Class – Treats and Eats with Krista and Jodi

This month’s live cooking class included SIX great recipes featuring the April specials including some bonus recipes based off of the annual SPRING SALE. We cooked up a storm so set aside some time today to learn our tips and tricks for cooking with freeze-dried food. You may be surprised at how easy (and delicious) it is to cook with items from your food storage!

Chicken and Mashed Potato Casserole

Ingredients:
3 cups Thrive Instant Mashed Potatoes, prepared (APRIL SPECIAL)
1 ½ cups Thrive Grilled Chicken Dices (SPRING SALE 25% OFF)
1 cup Thrive Mozzarella Cheese, divided (APRIL SPECIAL)
1/3 cup Thrive Peas (APRIL SPECIAL)
1/3 cup Thrive Sweet Corn (SPRING SALE 50% OFF)
2 cups Thrive Life Velouté, prepared (APRIL SPECIAL)
¼ cup of french-fried onions
½ tsp mustard
¼ tsp garlic powder
¼ tsp pepper

Directions:
Preheat oven to 375°. As you preheat, rehydrate mozzarella cheese and prepare mashed potatoes according to label directions. Stir together the mashed potatoes. Spread into a greased 2 1/2-quart casserole dish making a shell across the bottom and up the sides.

Mix 2 cups of velouté according to the label directions. Mix the velouté, 3/4 cup cheddar cheese, chicken, peas, corn, mustard, garlic powder, and pepper. Spread mixture into the mashed potato shell. Bake for about 30 minutes or till hot.

Top with French-fried Onions, and the remainder to the cheese. Bake for 5 more minutes.


Strawberry Jam Recipe

Ingredients:
2 cups Thrive Strawberries (APRIL SPECIAL)
1/2 cup Water
1/2 cup Sugar
1 T. Lemon Juice

Directions:
Combine the ingredients and let sit until the strawberries are rehydrated. Puree with a hand blender or in a regular blender or food processor.Feel free to add in some of the strawberry powder that settles at the bottom of your can to make a thicker jam.


Strawberry Swirl Bread Recipe

Ingredients:
1 pantry can Thrive Country White Dough Mix (APRIL SPECIAL)
1 pkg Instant Yeast
1 cup + 3 T. Hot Water
1-1 1/2 cups Strawberry Jam (see recipe above)

Directions:
Add hot water to a stand mixer. Pour in 1 packet of instant yeast (about 2 1/4 tsp) and let sit for a minute. Gradually mix in an entire pantry can of white dough mix. Knead for 5 minutes (may need to add more water if a dough ball doesn’t form). Move dough to a greased bowl and cover with plastic wrap. Allow to rise for 1-2 hours.

Roll out the dough onto a greased surface. Make a rectangle sightly wider than your bread loaf pan (I use a 4×8 pan so I make it about 10 inches wide). Spread strawberry jam onto the dough in a thin layer, leaving about an inch uncovered on all sides. Roll the rectangle up into a loaf trying to keep the jam from oozing out the sides. If it accumulates at the front of your roll you can scoop a little back into your jam bowl. Pinch the end all the way across the dough roll to seal it on top of the loaf. Pinch and fold the sides in so the seam is also on top. Flip the loaf over into a greased bread tin so the seams are all on the bottom. Cover with greased plastic wrap and let raise for 1 hour.

Bake the bread at 350 degrees for 1/2 an hour. Let cool before cutting into it or the jam will be gooey. Top with the remaining strawberry jam and enjoy!

Chicken Salad

Ingredients:
1 1/2 cup Thrive Diced Chicken/Chopped Chicken (APRIL SPECIAL)
2 tbsp Thrive Chopped Onions (SPRING SALE 25% OFF)
1/4 cup Thrive Celery (SPRING SALE 25% OFF)
1/2 cup Mayonnaise
1 tsp Thrive Chef’s Choice Seasoning Blend
1/2 cup Thrive Cranberries (SPRING SALE 50% OFF)

Directions:
Chop celery into smaller pieces if desired. Reconstitute chicken, onions, and celery by covering them in water; allow to sit for about 10 minutes and drain any excess water. Mix all ingredients together and let sit in refrigerator for 1 hour. Mix again before serving.


Single Serving Taco Mix

Ingredients:
3 tbsp Thrive Ground Beef (SPRING SALE 30% OFF)
3 tbsp Thrive Shredded Cheddar Cheese (SPRING SALE 30% OFF)
2 tbsp Thrive Sweet Corn (SPRING SALE 50% OFF)
1 tbsp Thrive Chopped Onions (SPRING SALE 25% OFF)
1 tbsp Thrive Green Chili Peppers
1 tsp Taco Seasoning Mix

Directions:
Add ingredients in the order list to a half-pint jar. When ready to serve add 1/3 cup of boiling water and stir or shake up the jar.


Single Serving Tropical Pork

Ingredients:
3 tbsp Thrive Shredded Pork (SPRING SALE 40% OFF)
3 tbsp Thrive Shredded Mozzarella Cheese (APRIL SPECIAL)
2 tbsp Thrive Mangoes (SPRING SALE 35% OFF)
1 tbsp Thrive Chopped Onions (SPRING SALE 25% OFF)
1 tbsp Thrive Green Chili Peppers
1 tsp Taco Seasoning Mix

Directions:
Add ingredients in the order list to a half-pint jar. When ready to serve add 1/3 cup of boiling water and stir or shake up the jar.
