My family does weekly Sunday dinners at my mom’s house and each of us brings an item to go along with the main dish that she will be cooking. Some weeks I just DO NOT feel like going to the grocery store and this was one of those weeks. I volunteered to make the dessert knowing I could count on my Thrive desserts to bail me out. But I didn’t want to be boring so I came up with these fancy Coconut Chocolate Chip Brownies that were a huge hit! And I made them all from items I had in my pantry. WOO-HOO!
Ingredients:
1 1/2 c. Thrive Macaroon Cookie Mix
3 3/4 c. Thrive Brownie Mix
1/2 c. chocolate chips (optional)
1/2 c. coconut flakes (optional)
Directions:
Preheat oven to 350 degrees. Mix macaroon mix with 1/4 cup of hot water. Pour into bottom of a greased 9×9 baking dish. Bake for about 10 minutes until cookie layer is firm but not brown. While the bottom layer is cooking, add 1/2 cup water to brownie mix and let sit for at least 5 minutes. Pour the brownie mix into the pan on top of the cookie layer. Yummm. Bake for about 20 minutes. Remove from oven and sprinkle chocolate chips and coconut flakes on top and bake for 5-10 more minutes or until brownie layer is not gooey when you insert a toothpick. EAT and ENJOY!
